An Easy Winter Dinner Classic: Tortellini Soup with Italian Sausage and Kale
Nothing is better than a hot home soup this winter, especially when it is done in 30 minutes.
Here is what you need to prepare this simple winter soup:

- 1lb mild Italian sausage (grounded)
- 1 onion (minced)
- 6 garlic cloves (minced)
- 1 quart chicken stock
- 1 can (14 oz) crushed tomatoes
- 2 tbsp. of tomato paste
- 1 tsp. of salt
- 1 bunch kale (with removed stems)
- 1 bag (10 oz) tortellini (not dried)
- 1 cup heavy cream
- Some Parmesan cheese
- ¼ tsp. of red pepper flakes
Heat a large soup pot over medium-high heat. Add the sausage, onions and garlic to the pot and sauté for about 5 minutes, or until the onions are soft. If there is any excessive fat, you can drain it off. Add the chicken stock, crushed tomatoes and tomato paste. Whisk until tomato paste is fully incorporated. Bring to a boil, season with salt then simmer for about 15 minutes. Add the kale, tortellini and heavy cream and simmer for about 3-5 minutes until the kale is wilted and the pasta is tender.
Sprinkle with Parmesan cheese and red pepper flakes and enjoy your winter soup.
