Pistachios Slice and Bake Cookies Recipe
We all love cookies and we make them all the time. Today’s recipe is for dark chocolate and pistachios slice and bake cookies! They’re salty, sweet, and seriously so easy to prepare.
Here is the recipe:
- 1 cup unsalted pistachios
- 4 ounces unsalted butter (softened)
- 1/2 cup granulated sugar
- 1 egg
- 1 and 1/2 cups all-purpose flour
- 8 ounces dark chocolate (chopped)
In a small bowl, add the pistachios and cover them with water. Set aside for 30 minutes. Drain the pistachios well and place them on a paper towel to dry.
To prepare the cookie dough, take a bowl and add the butter and sugar. Using a handheld electric mixer beat the mixture on medium-high speed until pale and fluffy. Add in the egg and beat again until well combined. Add in the flour and pistachios and whisk until you get stiff dough.
On a clean work surface, sprinkle 2 tbsp. of flour and scrape the cookie dough. Gently knead it for 30 seconds. Divide the dough in half, and then roll each portion of cookie dough into a log that’s roughly 2″ in diameter. Wrap each log tightly in plastic wrap and refrigerate for at least 2 hours.
Preheat the oven to 350 degrees (F). Line a large baking sheet with parchment paper. Once the dough is ready, take it out from the fridge and slice the logs of cookie dough into 1/4″ rounds. Place the cookies 1/2″ apart on the prepared baking sheet, and bake for 10 to 12 minutes, or until lightly golden. Cool for at least 15 minutes before removing.
To prepare the chocolate coating, you need to melt the chopped chocolate in a microwave. Dip each cookie halfway into the melted chocolate. Sprinkle with some more chopped pistachios. Set aside for the chocolate to set before serving.
