The Best Recipe for High-Protein Shrimps and Veggies Salad

The Roasted Shrimps & Veggies Salad Recipe


  • 1 cup cherry tomato (sliced)
  • 1 cup carrot (shredded)
  • 1 cup yellow bell pepper (diced)
  • 1 cup red onion (diced)
  • 1 cup asparagus, (diced)
  • 1 lb shrimp
  • Some olive oil (to coat)
  • Some chili powder (to taste)
  • Some fresh oregano (to taste)
  • Some salt (to taste)
  • Some ground pepper (to taste)
  • Some lime juice (to taste)
  • 1 large handful mixed greens

For the dressing:

  • 3 tbsp. of lime juice
  • 2 tbsp. of olive oil
  • 1 tbsp. of honey
  • ½ tsp. of chili powder
  • Some salt and pepper


First, preheat the oven to 400˚F (200˚C). Add all the veggies to a baking sheet lined with parchment paper. Drizzle in olive oil and sprinkle with seasonings to your preference. Bake for around 10 minutes.

Once the veggies are done, place them to the side to make space in the center of the baking sheet and add shrimps. Drizzle again with some olive oil and sprinkle with seasonings of your choice. Bake for 5-8 minutes, until shrimps are completely cooked.

In a small bowl combine all the ingredients for the dressing. Mix well. In a large salad bowl, combine mixed greens, roasted shrimp, and veggies. Add the previously prepared dressing and serve.
