The Perfect Winter Recipe: Spicy Potato Kale Bowls with Mustard Tahini Dressing

This amazing meal is perfect for your family and friends. Crispy potatoes, red onion, marinated kale and the delicious creamy dressing make this meal perfectly tasty and healthy.

Here is how to prepare this easy dinner recipe:


(This recipe makes 4 servings)

For the potatoes

  • 1 lb yellow potatoes (cut in small pieces)
  • 1 red onion (diced and separated)
  • 1 jalapeño (diced)
  • 1 green bell pepper (diced)
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp chili powder
  • Salt and pepper to taste

For the Dressing

  • 1/2 cup tahini
  • 2 tbsp red wine vinegar
  • 2 tbsp yellow mustard
  • Some fresh lemon juice to taste
  • 1 tsp oregano
  • 1/2 tsp garlic salt
  • Some pepper to taste
  • Some water if needed

For the salad

  • 4 cups kale (chopped with the stems removed)
  • Juice from 1 lemon


First preheat the oven to 425 degrees and line a baking sheet with parchment paper. Mix the potatoes, 1/2 of the red onion, jalapeño, bell pepper, olive oil, paprika and chili powder in a big bowl. Stir everything well. Put the mixture on the baking sheet and sprinkle with some salt and pepper to taste and then place it in the oven. Bake for about 20 minutes. Remove from the oven to flip and cook for an additional 10-20 minute, or until potatoes are crispy and veggies are soft.

Mix all of the dressing ingredients in a big bowl and stir to combine. Season it with salt and pepper to taste. Add some water if you think the mixture is thick. Put it in the fridge until ready to use.

In a big bowl, add the chopped kale and the lemon juice. Mix everything well. Put it in the fridge until ready to use.

At the end, remove the potatoes from the oven and sprinkle with additional salt, to taste. Assemble bowls by layering kale, the remaining raw red onion and potatoes. Drizzle with dressing and serve.
