Warm Breakfast Recipe: Blueberry Bread Pudding

Who says you cannot have dessert for a breakfast? This amazingly delicious blueberry bread pudding can be served warm as a breakfast and your family will love it. It takes only 10 minutes to prepare it.

Here is how to prepare the Blueberry Bread Pudding:

Ingredients:

(This recipe makes 6 servings)

  • 3 large croissants or plain bread
  • 1 cup blueberries (fresh or frozen)
  • 8 oz cream cheesesoftened
  • 2/3 cup sugar
  • 2 eggs
  • 1 tsp. vanilla or almond extract
  • 1 cup milk
  • 2 tbsp. powdered sugar

Instructions:

Prepare a baking pan, grease it and set aside. Preheat oven to 350°F / 175°C. Cut the bread roughly into 1-inch pieces. Then, place it the pan and sprinkle with the blueberries.

In a medium bowl, add the cream cheese, sugar, eggs and vanilla and mix all together until smooth. Add the milk and whisk again to make a batter with pourable consistency. Pour batter over the bread pieces and blueberries. Bake the bread for around 30-40 minutes or until it becomes golden. Then, set aside to cool on a room temperature for about 5 minutes.

Sprinkle some powdered sugar all over the bread and serve it immediately.
